"Preservation turns memories and tastes into a diary."
The salty fragrance in the jar is a snapshot of the four season.
The laughter and song of the elders are awakened by the warm fragrance of fermented rice.
The sharing of meat by firelight embodies family bonds and blessings.
Curing, fermentation, smoking, and drying are all pens of time.
Seasons and thoughts are written down in the lexicon of the tastebud.
Preservation is how culture is sustained in everyday life, and remembered through sharing.
As the fire awakens in the Three Stone Stove, the salted mustard greens in the jar capture the passing of the seasons in their salty fragrance; corn and pickled mustard greens hung out to dry under the sun sway gently in the mountain breeze as peanuts leave their sweetness in the ashes.
Auntie recalls how children once jumped excitedly up and down to grab at the pickled mustard greens hanging from the eaves. At home, the women pickled the mustard greens they grew alongside the millet to turn them into delicious everyday dishes; in the mountains, hunters smoked their prey to reduce the weight and take the meat home to share with the tribe before it could spoil.
On the dining tables of the Uninang Community (Sunungsung), you will try your hand at pickling mustard greens. You will also join hunters on the game trail to etch the flavors of time into your memories.
